Mojito
Ingredients
1 to 1.5 Teaspoons of Sugar in the Raw
1 Lime
.5 Teaspoon of 1:1 simple syrup
2 oz. of White rum (Probitas, Plantation 3 Stars, or similar)
Mint leaves
Club soda
Crushed ice
Instructions
Trim the ends off of a lime and cut the lime in half and then each half into quarters.
Discard the ends of the lime.
In a highball glass, add the lime pieces and 1 to 1.5 teaspoons of Sugar in the Raw.
Add .5 teaspoon of 1:1 simple syrup or flavored syrup.
Add about 8 mint leaves.
Gently muddle sugar, lime, syrup and leaves a few times.
Add crushed ice.
Add 2 oz. of white rum.
Stir gently with a swizzle stick.
Add more crushed ice and top with club soda.
Garnish with a sprig of mint and serve with a straw.
